The Cake Doctor's Quick Caramel Frosting
This is from The Cake
Mix Doctor's frosting book; although she starts her cakes with a mix, she
insists upon making all frosting from scratch. Makes enough for a double layer
cake or 24 cupcakes, and is absolutely heavenly on just about anything!
Quick Caramel Frosting
1 stick (8 tbs.)
butter
1/2 cup lightly packed
brown sugar
1/2 cup lightly packed
dark brown sugar
1/4 cup + 2 tbs. milk
2 cups confectioners
sugar, sifted
1 tsp. pure vanilla
extract
Place butter &
brown sugars in a heavy, medium sized saucepan over medium heat.
Cook stirring
constantly, until the mixture comes to a boil, then remove pan from heat.
Add 1 1/2 cups of the
confectioners sugar and the vanilla and whisk until the frosting is smooth.
Add the rest of the
confectioners sugar, a little at a time, until of smooth, spreading
consistency.
Ladel the frosting over the cake layers or
spoon over cupcakes while frosting is still warm; it will set as it cools.
